Perfectly Boiled and Charred Corn on the Cob
There are loads of ways to cook corn on the cob. The key is to not over or under cook it. This approach below should get you a great result. You don't have to char it, but it adds some great flavour to a lot of dishes. Just cooking it and rubbing a lime cut in half on it with some butter, salt and pepper can taste amazing!

Equipment
- Large saucepan with lid
- Tongs
- Grill or stove with grill pan
Ingredients
- 4 corn on the cob
- Water enough to cover corn
- 2 tbsp butter optional, for serving
- Salt and pepper optional, for serving
Instructions
Prep in Advance
- Start by washing your hands.
- Gather all utensils and ingredients.
- Rip any leaves and 'hairs' off the corn (this is called 'shucking the corn').
- Fill a large saucepan with (enough water to cover the corn – just estimate for now)
Let's Cook!
- Place the large pot on the stove.
- Turn the heat to high and bring the water to a boil.
- Once the water is boiling, carefully add the corn on the cob using tongs. Are they all covered with the water? If not, pour some more in.
- Boil the corn for 7 minutes.
- Turn off the heat and carefully remove the corn from the pot with tongs.
- This is probably ready to eat now. Take yours, let it cool enough to bite into it, and take a bit to test if it's perfectly done! Not too hard, but not mushy. If it needs longer, put them back in for a minute or two at most and test again. Do NOT walk away! You'll over do it! Once done, remove them from the water.
To char the corn
- You can use a grill, a BBQ, a griddle pan or even a frying pan to do this. Ultimately, you just want high heat on your corn for a short period of time so that it blackens up a bit. Not too much – that's burnt! But just enough to give a little charred flavour. So do this..
- Preheat your grill or pan on high heat.
- Place the boiled corn on the grill or pan
- Char the corn on all sides, turning occasionally with tongs, for about 5 minutes or until you see grill marks and the corn is slightly blackened.
- Remove the corn from the grill.
- Season with salt and pepper to taste, and butter and lime juice! (Just cut a lime in half or in quarter segments, and rub it all over the corn) and either eat straight off the cob, or if slicing the kernels off, do the last step below.
- You can now cut the corn kernels off using a chef's knife (maybe get some help if you haven't done this before!) You'll need to hold the corn cob with one end on the chopping board, and hold the top end either with your hand or a fork stabbed into the end. Hold it steady. And ONLY when it's steady and you're in control, take your chef's knife and slice the corn off all the way down one edge of the cob. Then, rotate the corn, and slice the next length off. Slide the knife back and forth to do this. It should come off easily because the corn is cooked.
