Aussie Wrap

My (Aussie) wife makes these (she's the only wife I've got, she's just Aussie) packing them with lots of colour and lots of healthy salad, and with beetroot, pineapple, and if I ask for it egg too! We called it the 'Aussie Wrap' because it's the wrap equivalent to the 'Aussie Burger' which you may know has pinepapple, beetroot and often an egg in it too!) We love it all straight out the fridge if possible – cold and crisp. I could live off these. And I'm glad the kids are making them too now.
Note: we've given amounts in the recipe for each ingredient. But there are no rules! Put as much of whatever you want in to suit your taste.

Equipment

  • Vegetable peeler
  • Grater (or spiralizer)
  • chefs knife
  • Cutting board
  • Small bowl
  • Large mixing bowl
  • Spoon

Ingredients
 

  • 4 large tortilla wraps
  • 100 g beetroot
  • 100 g carrot
  • 4 tbsp mayonnaise
  • 4 tbsp sweet chilli sauce
  • 100 g cheddar cheese
  • 1 cucumber
  • 2 tomatoes
  • 1 avocado
  • 150 g pineapple
  • 1 red bell pepper
  • 1 handful fresh spinach leaves
  • Salt and pepper to taste

Instructions
 

Prep in Advance

  • Wash your hands.
  • Gather all necessary utensils and ingredients. Lay them all out in front of you.
  • Wash all your salad. Spin dry any leaves, and leave the rest to drain for a while.
  • Get plates for each person, and lay out a tortilla wrap on each plate.

Let’s Cook!

  • Grate the beetroot. Use a grater, spiralizer, or food processor with grater (maybe get some help if you've not done that before!)
  • Grate the carrot.
  • Grate the cheese.
  • Thinly slice the cucumber with your chef's knife. (Or finely chop it – it doesn't matter which!)
  • Dice the tomatoes.
  • Thinly slice the avocado. (See video).
  • Dice the pineapple. (You can alternatively used tinned pineapple!) To dice, first slice the skin off carefully bit by bit. Then cut the pineapple into rings. Then you need to remove the core. To do that, you can cut a ring into quarters. Once in quarters, slice the little corner off each quarter (which is the core). Now you can dice what's left.
  • Thinly slice the red bell pepper. (See video).
  • In a small bowl, mix the 4 tbsp mayonnaise and 4 tbsp sweet chilli sauce until well combined.
  • Spread a tablespoon of the sweet chilli mayo sauce evenly over each tortilla.
  • Add a handful of fresh spinach leaves on each wrap.
  • Layer the grated beetroot and grated carrot evenly.
  • Add the cucumber slices, diced tomatoes, and avocado slices.
  • Sprinkle the diced pineapple over the top.
  • Add the thinly sliced red bell pepper.
  • Sprinkle grated cheddar cheese evenly on each wrap.
  • Does it need a little more sauce? Add some if so!
  • Season with salt and pepper to taste.
  • Carefully roll each tortilla wrap, tucking in the sides as you go, to enclose the filling. The best way is to fold the bottom up first to enclose the filling in. Then fold in one side nice and tight over the filling. Then do the same on the other side. Nice and tight again. Squeeze it together and put it seam side down on the plate so that it holds together under it's own weight.
  • Slice each wrap in half for easier eating and presentation. You can optionally wrap each on in baking paper or foil to give the lucky person who's eating it something clean to hold on to.
