Equipment

  • Grill or George Foreman
  • Small saucepan
  • chopping board
  • Sharp knife
  • Mixing bowls
  • Tongs
  • Grater or zester
  • Teaspoons and tablespoons

Ingredients
 

For the Wraps

  • 4 Lebanese flatbreads or pita
  • 800 g Boneless chicken thighs skinless
  • 6 tbsp Garlic mayonnaise
  • 6 tbsp Kebab chilli sauce see below
  • 4 Green pickled chillies sliced
  • 4 tbsp Shredded iceberg lettuce
  • 4 tbsp Grated cheese
  • 6 tbsp Tabouli or parsley salad
  • Tabasco optional

For the Chilli Sauce

  • 100 ml Malt vinegar
  • 120 g Granulated sugar
  • 6 Green bird’s-eye chillies chopped
  • 100 ml Tomato ketchup
  • 1 tsp Worcestershire sauce

Garlic Mayo Boost (Optional)

  • 1 tbsp Lemon zested and juiced
  • 4 tbsp Garlic mayonnaise extra

Instructions
 

Chilli Sauce

  • Add vinegar and sugar to a small saucepan
  • Bring to a boil over medium heat
  • Add chopped chillies
  • Simmer for 5 minutes to reduce by half
  • Stir in tomato ketchup
  • Stir in Worcestershire sauce
  • Simmer gently for 5 more minutes
  • Set aside to cool

Garlic Mayo Boost

  • Add lemon zest and juice to garlic mayo
  • Mix well and chill

Chicken & Assembly

  • Preheat grill or George Foreman
  • Season chicken with salt and pepper
  • Grill chicken 6–8 mins each side
  • Slice chicken into strips
  • Warm flatbread briefly
  • Spread garlic mayo
  • Add grilled chicken
  • Spoon chilli sauce
  • Add pickled chillies, lettuce, cheese, salad
  • Drizzle with Tabasco if desired and roll up
