Ingredients
 

For the Banana Bread

  • 3 large ripe bananas about 300g peeled
  • 100 g soft light brown sugar
  • 50 g granulated sugar
  • 2 medium eggs
  • 80 mL olive oil or neutral oil
  • 60 mL whole milk
  • 1 tsp vanilla extract
  • 190 g plain flour
  • 0.75 tsp bicarbonate of soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 50 g chopped nuts or dark chocolate chips optional

Instructions
 

Let’s Cook!

  • Wash your hands.
  • Gather all ingredients and equipment.
  • Preheat oven to 170°C (fan) / 190°C (conventional).
  • Grease and line loaf tin with baking paper.
  • Peel and mash bananas with a fork until mostly smooth.
  • In another bowl, whisk together brown sugar, granulated sugar, and eggs.
  • Add olive oil and whisk until smooth.
  • Add milk and vanilla. Whisk to combine.
  • Add mashed bananas to the mixture. Stir in with spatula.
  • Whisk flour, bicarbonate of soda, salt, and cinnamon in another bowl.
  • Fold dry ingredients into the wet mixture gently.
  • Fold in chopped nuts or chocolate if using.
  • Pour batter into prepared tin. Smooth the top.
  • Bake for 50–60 mins or until a skewer comes out clean.
  • Let cool in tin for 10 mins, then on a rack for at least 30 mins.
