Banana Bread
This banana bread uses olive oil and milk for moisture and lightness, with a soft crumb and delicious banana flavour. It's super easy and totally fuss-free.

This version is ideal when you don’t have sour cream. The olive oil and milk keep it tender and beautifully soft.

- Loaf tin (900g)
- Mixing bowls
- Fork or masher
- Whisk
- Spatula
- Measuring spoons

Ingredients
For the Banana Bread
- 3 large ripe bananas about 300g peeled
- 100 g soft light brown sugar
- 50 g granulated sugar
- 2 medium eggs
- 80 mL olive oil or neutral oil
- 60 mL whole milk
- 1 tsp vanilla extract
- 190 g plain flour
- 0.75 tsp bicarbonate of soda
- 0.5 tsp salt
- 0.5 tsp cinnamon
- 50 g chopped nuts or dark chocolate chips optional
Instructions
Let’s Cook!
- Wash your hands.
- Gather all ingredients and equipment.
- Preheat oven to 170°C (fan) / 190°C (conventional).
- Grease and line loaf tin with baking paper.
- Peel and mash bananas with a fork until mostly smooth.
- In another bowl, whisk together brown sugar, granulated sugar, and eggs.
- Add olive oil and whisk until smooth.
- Add milk and vanilla. Whisk to combine.
- Add mashed bananas to the mixture. Stir in with spatula.
- Whisk flour, bicarbonate of soda, salt, and cinnamon in another bowl.
- Fold dry ingredients into the wet mixture gently.
- Fold in chopped nuts or chocolate if using.
- Pour batter into prepared tin. Smooth the top.
- Bake for 50–60 mins or until a skewer comes out clean.
- Let cool in tin for 10 mins, then on a rack for at least 30 mins.
