Spaghetti Aglio e Olio
About as simple as you can get for a spaghetti, but one that'll help you know what you're doing with boiling and simmering.

Equipment
- Large pot for boiling pasta
- Colander for draining pasta
- Large pan for the sauce
- Knife and cutting board for garlic
- Tongs or pasta spoon
Ingredients
- 400 g spaghetti
- 4 cloves garlic
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes or chipotle / chilli flakes
- salt
- 1 handful fresh parsley
- Parmesan cheese
- 1 bag of salad leaves of choice
- 1 cup pasta water (from your pasta)
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tsp dijon mustard
Instructions
Prep in advance
- Wash your parsley and spin dry (or shake and leave to drain)
- Thinly slice 4 cloves garlic and set aside
- Finely chop 1 handful fresh parsley for the garnish
- Grate your parmesan cheese (you’ll sprinkle this on top of everyone’s meal so grate enough to keep everyone happy)
- Put your bag of salad leaves into a bowl
- Combine 3 tbsp olive oil, 1 tbsp white wine vinegar and 1 tsp dijon mustard in a small bowl to make a vinaigrette. You know how to do this if you’ve followed our training recipes through in the right order!
- Pour your vinaigrette over the salad then toss to coat well and set aside
Let's Cook!
- Fill the large pot with water and add about 1/2 tsp of salt (it doesnt have to be exact)
- Bring the water to a boil over high heat
- Add 400 g spaghetti to the boiling water. If it won’t quite fit in, let part of it soften in the water then push the rest in carefully without burning yourself
- Cook the spaghetti until al dente (see video)
- Measure out 1 cup pasta water from the pan and set it aside in a bowl
- Drain the pasta using the colander
- Heat 1/2 cup extra virgin olive oil in your second large pan over medium heat
- Add the sliced 4 cloves garlic to the oil
- If using, add 1/2 teaspoon red pepper flakes or chipotle / chilli flakes
- Gently simmer the garlic until it's golden brown
- Turn off the heat
- Add the cooked spaghetti to the skillet
- Toss the spaghetti with the garlic oil until coated
- Add the reserved pasta water if needed to loosen the sauce (you could add just a small amount first to see if it’s a good consistency)
- Dish out the pasta onto plates and garnish with your chopped parsley and grated parmesan
- Crack some black pepper over each meal
- Serve the spaghetti hot with the salad on the side
