Chicken and chorizo salad
A simple salad that makes a great meal! The only things you need to cook are the chicken and quinoa. Then you just sling it together!

Equipment
- scales
- measuring jug
- griddle or frying pan
- heat proof bowl
- kettle
- salad serving bowl
- chopping board
- chefs knife
- small bowl or dish for vinaigrette
- teaspoon
- spatula or tongs for frying chicken
Ingredients
- 200 g green salad leaves
- 6 chicken thighs
- 200 g frozen peas
- 200 g quinoa
- 100 g chorizo
- 2 red or green chilli peppers
- 2 tbsp garlic mayonnaise
- 6 tbsp vinaigrette
- 1 tbsp olive oil you may need a bit more than this to suit
Instructions
- Read the instructions on your quinoa packet to see how to make it
- You'll need the right amount of water in your kettle to make 200 g quinoa
- Boil your kettle
- Weigh out about 200 g quinoa into your heat proof bowl
- Once boiled, pour your water over your quinoa and follow the packet instructions
- Ensure your salad leaves are washed! If not, wash and spin them dry
- Defrost your frozen peas by putting them in a bowl with water
- Put your griddle on pan on a medium sized hob
- Pour in about 1 tbsp of oil
- Turn the heat on to medium
- Open up your chicken thighs to be as flat as possible and drop them into the pan
- Stand by them as you fry or griddle them. Let them cook for a few minutes, then flip them over for the same amount of time on the other side. They should turn white, then eventually brown up a bit. You can increase the brown and griddle effect by pushing down for a bit on each one.
- Once cooked, remove the thighs onto a chopping board, and slice them up fairly thin
Assemble the salad
- Grab your salad bowl
- Put all the green salad leaves in the bottom
- Pour your quinoa on top of the leaves
- Add your peas
- Add your sliced chicken, layering it to look nice
- Add your chorizo in and around the chicken, again making it look nice
- Add your strips of chilli
- Drizzle your garlic mayonnasise all over
- Drizzle your vinaigrette all over so that it runs down and through the salad
