Ingredients
 

  • 4 pork chops (bone-in or boneless)
  • to taste Salt
  • to taste Black pepper
  • 2 tbsp olive oil
  • 2 apples
  • 2 tbsp brown sugar
  • 100 mL apple cider vinegar
  • 100 mL water
  • 1 kg potatoes
  • 100 mL milk
  • 50 g butter
  • 500 g green beans
  • 1 tbsp butter

Instructions
 

Prep in advance

  • Season the 4 pork chops (bone-in or boneless) with salt and black pepper (sprinkle them from a height so that they distribute broadly across the pork chop). Do this on both sides.
  • Peel the 1 kg potatoes and cut them in half (so that they'll boil quicker later)
  • Peel the 2 apples, and cut the core out. If you have an apple corer, that's easy! If not, you can cut the apple in half, then those halves in half again. Then you can carefully cut the core out from each of the 4 segments.
  • Chop the apples up roughly so that they warm through faster when we cook them.
  • Trim the 500 g green beans (tops and tails)
  • Rinse the beans and leave them to drain.

Let's Cook!

  • Heat 2 tbsp olive oil in a frying pan over medium-high heat.
  • Add the pork chops to the pan and cook for about 5-7 minutes on each side until they are browned and cooked through. You can ramp the heat up towards the end to give them a nice dark/caramelised finish.
  • Remove the pork chops from the pan and set them aside.
  • In the same pan, add the apples and cook for 3-4 minutes until they start to soften.
  • Add 2 tbsp brown sugar
  • Add 100 mL apple cider vinegar
  • Add 100 mL water
  • Stir well and let it simmer for about 10 minutes until the apples are very soft and the sauce has thickened.
  • Place the chopped potatoes in a large saucepan and cover with water. Add a little salt to speed up the boiling of the water.
    You can also speed things up by boiling the water in the kettle first, then pouring that on.
  • Bring to a boil and cook for 15-20 minutes until the potatoes are tender.
  • Has your timer gone off yet for the apple sauce? If so, return the pork chops to the pan and coat them with the apple sauce. Keep warm. If not, you'll be doing this shortly, so put your attention to that before moving on.
  • Once the potatoes are done, drain them using a colander and return them to the saucepan.
  • Add 100 mL milk
  • Add 50 g butter, salt, and black pepper to the potatoes. You can also add a pinch or two of nutmeg if you have some. Makes it even tastier!
  • Mash the potatoes until smooth and creamy. Keep warm.
  • Bring a pot of water to a boil (or use boiled water from the kettle) and add a pinch of salt.
  • Add the 500 g green beans and cook for 4 minutes until tender-crisp.
  • Drain the green beans and return them to the pot.
  • Add 1 tbsp butter, salt, and black pepper to the green beans.
  • Toss the green beans until they are well coated.
  • Get your plates for serving up. Use the picture up the top as a guide. You're going for a nicely presented serving of mash, with the beans on the side, the pork chop next to it, and you can arrange the apple sauce on it to look as tasty as possible! Enjoy.
