Ingredients
 

Main Ingredients

  • 400 g dried spaghetti
  • 3 tbsp olive oil
  • 6 anchovy fillets in oil
  • 4 garlic cloves finely sliced
  • 1 tsp chilli flakes
  • 100 g black olives pitted and halved
  • 2 tbsp capers rinsed
  • 400 g tinned chopped tomatoes
  • 50 g sun-dried tomatoes in oil finely chopped
  • 1 tsp smoked paprika
  • salt to taste
  • freshly ground black pepper to taste
  • fresh flat-leaf parsley chopped
  • parmesan cheese to taste

Instructions
 

Let’s Cook!

    • Fill a large saucepan with water
    • Add a good pinch of salt to the water
    • Bring the water to a rolling boil
    • Add the spaghetti and cook until al dente
    • Meanwhile, heat olive oil in a frying pan over medium heat
    • Add anchovy fillets and stir until they melt into the oil
    • Add garlic and stir for 30 seconds
    • Add chilli flakes, sun-dried tomatoes, and smoked paprika
    • Stir in chopped tomatoes, olives and capers
    • Simmer the sauce for 10 minutes
    • Drain the pasta, reserving some pasta water
    • Toss spaghetti with the sauce and loosen with pasta water if needed
    • Season with salt and pepper
    • Sprinkle with chopped parsley and parmesan and serve immediately
