One of the easiest things to make, and you can pretty much put what you want in there. Not a bad way to use up some leftovers.

Equipment
- Largen non-stick pan (around 24cm or 9.5″)
- Mixing bowl
- Whisk or fork
- Spatula
- Frying pan
Ingredients
- 8 large eggs
- Salt and pepper to taste
- 2 tbsp unsalted butter
- 1/2 tbsp olive oil
- 100 g mozzarella or cheese of your choice
Optional Fillings
- 6 rashers crispy bacon or prosciutto optional
- 1/2 cup mushrooms optional
- 1 red pepper optional
- 1 tbsp chives otional
- 1 tbsp parsley optional
Optional Garnishes
- 1 avocado
- 1 cup cherry tomatoes
Instructions
Prep in advance
- Shred or chop your 100 g mozzarella or cheese of your choice into small peices and set aside in a bowl
- Cook your 6 rashers crispy bacon or prosciutto (if using) in your frying pan until crispy
- Once done, set aside and let it cool
- Roughly chop your 1/2 cup mushrooms
- Pour 1/2 tbsp olive oil into your frying pan and saúte your mushrooms until softened
- When done, set aside and let cool
- Chop your 1 red pepper into roughly 1cm cubes
- Finely chop your 1 tbsp chives and 1 tbsp parsley and set aside in a bowl together
- Slice your 1 avocado and set aside
- Wash your 1 cup cherry tomatoes and set aside
- Once your bacon has cooled enough to touch, chop into small pieces
Let's Cook!
- Start by washing your hands and gathering all necessary utensils and ingredients.
- Beat the 8 large eggs in a mixing bowl with a pinch of salt until foamy, aiming for airiness for that extra fluffiness.
- Heat the pan over medium heat, add butter, and let it melt completely.
- Add the 2 tbsp unsalted butter and stir until melted
- Pour in the beaten eggs, reduce the heat to low, and cook gently to avoid browning.
- Add your choice of fillings and cheese to one half of the omelette once the eggs are nearly set.
- Fold the omelette in half, letting the heat melt the cheese and warm the fillings.
- Serve immediately with your chosen garnishes.
